Dutch Baby

Ingredients

3 tbsp butter

1/2 cup milk

1/2 cup flour

2 or 3 eggs

1 tsp vanilla

1-3 tsp sugar of some kind: white sugar, brown sugar or maple syrup. I put less sugar if I know Im going to cover it in maple syrup after, if I'm not, then I put more to give it some nice sweetness.

1 bowl

10 inch cast iron skillet

Whisk

1. Heat oven to 425 degrees. 


2. Whisk together milk, flour, eggs, vanilla, sweet.


3. Put a cast iron skillet in the oven with butter. Keep an eye on it, so that it doesnt burn, but if it browns its still good. You want the butter to melt completely in the hot skillet. Also don't skimp on the butter, otherwise this thing will stick and it wont rise as well.


4. Once the butter is completely melted, take it out. Pour in the batter.


Pro Tip: Use a hot pad to put it back in the oven. I've forgotten this before, you know, kids running around a kitchen and urgent text messages, distracting me from common sense. My hand healed, but it hurt like hell.


5. Cook for 18ish minutes. Its going to puff up really nicely in the oven.


As you can tell I'm kind of a "ishhh" baker. You can mess around with the proportions of things in this recipe until you get it the way you like it. Its SO easy in the morning and really impressive.


For brunches, I've filled it with whipped cream, maple syrup and berries. Mmmmmmmm.
